Tomato Leek Soup is kind of like the chicken noodle soups of yore. Don’t get me wrong, even the can opener comes out when someone has a cold and is craving comfort of youthful memories. But it is seldom. The best part about a tomato based soup is that you probably always have the ingredients on hand. Ok, maybe not the leeks, but who does not have a few onions that are in need of being used. Leeks bump it up a notch.


As an upstanding member of the allium family, leeks offer many of the tasty nuances of an onion, but in a much milder form. When sautéed they offer a mildly oniony flavor and if left to simmer until they caramelize, they can bring a hint of sweetness to the dish. When I cook with leeks, I like them to shine and be a center of attention, so strong onions or garlic, should you feel tempted to add them, can overpower the subtle flavor that the leek brings.

Tomato & Leek Soup

Serves: 2-3
Prep Time: 10 min Cooking Time: 20 min

Easypeasy hot soup for a wintery, damp day.


  • 2 large leeks, cleaned and sliced into 1/4"/.63cm
  • 6 large tomatoes (or 1 box Pomi Tomato Purée)
  • 16 fl oz/500ml vegetable stock, chicken broth or water
  • 2 TBSP olive oil
  • 1 TBSP dried thyme
  • salt and pepper, to taste



Clean leeks and slice.


Heat olive oil in a soup pot or small stock pot.


Add sliced leeks and sauté until they start to soften.


Chop and add tomatoes. Cook until they start to break down. (Or add box of Pomi Tomatoes)


Add broth, stock or water.


Add thyme, salt and pepper.


Bring to a boil to blend flavors.


Serve with a gourmet grilled cheese, and you will feel your inner child all over again.
