Roasted Carrots w/ Honey & Thyme

Sometimes the most simple recipes are the best, and roasts carrots with honey and thyme fits the bill. We have hit our stride with root vegetables and are rounding the corner of the last burst of the winter food scene. Farmer’s markets sell the carrots in 10-25LB bags! You can buy a few, but the more you buy the lower the per carrot cost. Carrot bread, carrot cake, carrot walnut muffins, carrot soup, carrot purée. The list of carrot recipes is long, but when it gets to the end of the orange vegetable season, I like to make it easy.

Not much more to add on carrots at this time of year. Enjoy the last of the winter storage. And when the snow melts, remove the garden tarps, and start to plant. Happy Spring, if it is happening in your neck of the woods…we have a few more months here in Maine.

Carrots & Honey/Thyme 2

Roasted Carrot Round w/ Honey & Thyme

Roasted carrots with a touch of sweetness and the savory of thyme.


  • 8 oz/250g carrots, sliced into rounds
  • 2 TBSP honey, choose one with a robust flavor
  • 2 TBSP fresh thyme leaves or 2 tsp dried thyme



Preheat oven to 400°F/200°C


Clean and slice carrots into .25"/.65cm thick rounds. Peeling is optional.


Spread carrots in a baking dish.


Blend with EVOO, honey, thyme, salt and pepper in a small bowl and toss with carrots in the baking dish.


Roast for 30-45 minutes. The roasting time will depend on the size of the baking dish and how thickly stacked the carrots are in it.


Carrots should be soft enough to bite into, and a golden brown on the edges.
